I’ve been addicted to these chocolate peanut butter stuffed dates recently! They are really easy to make (especially in my Thermomix®), and the perfect healthy pick-me-up snack when you are craving something sweet. This chocolate peanut butter stuffed date recipe is vegan, dairy-free and gluten-free, and refined sugar free too.
To make these chocolate peanut butter stuffed dates, you will need some pitted medjool dates, creamy or crunchy peanut butter, and chocolate chips (semi-sweet or dark chocolate works best).
Step 1 is to make a small cut on one side of the dates, careful not to poke through to the other side, and then fill them with peanut butter using a butter knife. Then, put them in the freezer while you melt the chocolate.
Step 2 is to melt the chocolate…I do this in my Thermomix® because I can set the temperature to 120 F and know it will not burn! You can also carefully use a microwave or double boiler method… Place the dates in the chocolate and shake them off using two forks.
Let the dates set in the fridge for 10 minutes before enjoying!

1/2 cup semi-sweet chocolate chips
1/4 cup peanut butter
Directions
- Slice the dates on one side and stuff with peanut butter using a butter knife. Place in the freezer to chill.
- Melt the chocolate chips and 1 tsp peanut butter in a Thermomix® for 2 minutes on speed 3, or use a microwave or double boiler. Stir well.
- Drop the dates in the melted chocolate and shake off excess using two forks. Place them onto parchment paper and chill in the fridge for 10 minutes to set.
