I miss you guys! 16 days… I’m not counting or anything… 16 days left of my general medicine rotation, and then I will have my weekends back and more kitchen time!! It has been so hard being away from my kitchen this long, and I still have a few weeks to go. These past few weeks have been filled with long, exhausting days at the hospital, and I haven’t seen very much sunlight (I get there when it is dark and leave when it is dark). Living in San Francisco, I am already as white as a ghost, so this no-sunlight-period thing definitely isn’t helping. When I am at home, I try to eat as healthy as I can. I have been learning how to throw together some quick and healthy salads filled with a lot of vegetables, and making smoothies to take with me on-the-go. My new favorite is this apple pie smoothie, which uses a fresh apple and some spices. It tastes like apple pie in a glass! You know what they say, an apple a day keeps the doctor away…
- 1 gala apple, peeled and cored
- ½ cup non-fat plain yogurt
- ¼ tsp vanilla extract
- 1 tsp brown sugar
- ¼ tsp nutmeg
- ¼ tsp cinnamon
- Pinch of ground cloves (optional)
- 1 cup ice cubes
- Chop the apple into 1 inch cubes.
- Add all ingredients to a blender and pulse until well blended.
- Top with whipped cream and cinnamon for an extra sweet treat!
you are almost there 🙂 🙂 I dont like this always dark phase either. Apple pie smoothie sounds sooo good!!!
Thank you 😀
I’ll bet you’ll be glad when your current rotation is over! It sounds killer. And this Apple Pie Smoothie sounds killer, too, although in a good way. Terrific recipe – thanks so much.
Yes I can’t wait! Thanks John!
I was just thinking about pie milk shakes last night, and this is so much healthier and delicious – love it!
sounds like a fun, healthy drink for fall!
I’ve been making a very similar smoothie to this one for breakfast once or twice a week! It totally feels like I’m having dessert for breakfast 🙂 Good luck with the rest of your rotation. You’re in the home stretch!
Thanks Katie!!
What a perfect idea for a shake!
Thanks!
Love this fall smoothie idea! I’ve been missing my strawberries, but this smoothie sounds like the perfect thing to transition me into winter.
Thanks Sarah! I agree 🙂
Yup, I can see where this smoothie would be both delicious and filling…with a serving of fruit and dairy/protein, a meal in a glass. I’m sure your internal medicine rotation can be quite intense (I worked on a hem-onc unit for 5 years)…hope you can squeeze in a little R&R soon!!!
Wow heme-onc is tough :/ Thank you for the support 🙂
I love the idea of pie in a smoothie, healthier and so delicious 😀
Cheers
CCU
Well, I know it must seem like the longest time to you but to me, the time has been racing by. I will look forward to you being able to spend more time in your kitchen though. Good luck with the last few days xx
You have just a few days to go, hold and you will be done with it before you know it girl.
I love the sound of this smoothie.
Yes, SF weather is getting so cold…I woke up at 7 today and it was dark and cold..just wanted to stay in bed for long.
This smoothie looks fantastic!
Hang in there, almost done! And the smoothie looks great!
This looks delicious! A creamy, healthy, portable apple pie!?!? Perfect! Maybe with a cute, stripey straw, too!?!? Even better! If anything can brighten those dark early mornings for you, that should seriously help! Hang in there!! Pinning quick, quick – can’t wait to make this! 😀
Okay so I tried this myself…Abseloutely delicious! Tastes just like pie…
However, I mistakenly added greek yogurt instead of normal yogurt which gave the smoothie a satisfying “pancake batter” flavor. I really liked it, but will be trying with normal yogurt!
Thank you for posting this recipe! I had all the ingredients already at home, and it was really easy and fun to make and eat!
Love this recipe! I substitute honey/agave for the sugar and love my little apple pie in a glass. 🙂
Yummy!
I’m making these for sure as I have most ingredients available. The kids would like some of it when really hungry and crave something so delicious. thanks for sharing.
This is Going to Be Very Delicious for me and my Kids. Hungry Crave.
