This weekend we took a little weekend getaway to Lake Tahoe, and after a weekend of skiing, fresh air, gorgeous scenery and the jacuzzi I feel so refreshed and ready for the week! I hope you had a nice weekend too! This was the view from our room at breakfast this morning:
This week’s Sunday funday recipe is no-bake cocoa banana energy bites. They are incredibly easy to make (can you tell that already from the “no-bake” part?), and great for snacks on-the-go. I love to make these and bring them for a hike or bike trip because they give you a great boost of energy. Each one has close to 100 calories and is packed with protein and fiber. They are pretty addicting, if they weren’t so high in calories I would eat a dozen in one sitting!
No-Bake Cocoa Banana Energy Bites

Ingredients
- 1 cup NatureBox banana chips www.naturebox.com
- 1 cup rolled oats
- ¼ cup cocoa
- ½ cup chunky peanut butter
- ⅓ cup honey
Instructions
- Line a baking sheet with parchment paper.
- Crush the banana chips with the back of a butterknife and add to a large mixing bowl.
- Add the oats and cocoa to the banana chips and mix together.
- Add the peanut butter and honey and stir well.
- Place in the refrigerator and chill for 30 minutes.
- Once chilled, remove from the refrigerator and form small 1-inch balls with your hands.
- Place onto a baking sheet and chill for 15-30 minutes (until firm).
- Store in a sealed container in the refrigerator for up to one week.
Makes 2 dozen 1-inch balls

What a great idea! I just love it!! I love banana, chocolate and peanut butter together and I could imagine putting honey is fabulous!!

What an incredible view. How lovely to be able to go skiing for a weekend – we don’t have a lot of snow here so ski trips are very rare. These bites looks great and I love how they have banana chips in them xx
Ahhh I was just back in the Bay Area for the weekend and I miss Lake Tahoe!! That is one gorgeous view of the lake 🙂 Also, these look super amazing!! I’m almost thinking that I’m going to have to resist, because how could I eat just one? I am totally feeling the banana chips though, especially after staring at bags of them from every single snack vendor while trolling the airport (hate delayed flights!). Yum!
I will definitely be trying these! I’ve made the banana bites where it’s just bananas covered in chocolate and they’re good – but these look better!

We stayed at the Heavenly Valley Lodge Bed and Breakfast – I think it’s just down the street from the Marriott. If you go to tripadvisor.com, I did a review there – it was absolutely wonderful and the only place we’ll ever stay at when we go to South Lake Tahoe. I did a bunch of research before we went, and this one was pretty much the only one that came up without some type of negative review. It doesn’t even get close to ‘negative’, though – I’m sure you’d love it!

I think that would be totally fine, but remember it will add more “wet ingredient” vs dry, and also they will only be good for 1 day or so since bananas tend to go bad quickly once peeled!
