Power Greens Pesto

Ingredients
  • 1 lb fusilli pasta, cooked according to package directions
  • ⅓ cup fresh basil leaves
  • ⅓ cup baby spinach
  • ⅓ cup chopped kale (stems removed)
  • ⅓ cup chopped Swiss chard
  • ½ cup chopped walnuts
  • 2 tbsp grated Parmesan cheese
  • 2 garlic cloves, peeled and minced
  • ⅓ cup olive oil
  • Salt and pepper as desired
Instructions
  1. Add all ingredients to a blender or food processor and blend until smooth. Add more olive oil as needed.
  2. Toss with cooked pasta and serve warm or cold.
Makes 1½ cups pesto
